Sangihe Island is the major source of our nutmeg & mace. Many of our farmer’s trees are more than 100 years old.
The first harvest of a nutmeg tree takes place 7-9 years after planting. When the fruit turns a yellowish color it is ready to be plucked The flesh of the fruit is split directly in the field and the nutmeg seed is extracted.
Mace is separated from the nutmeg shell and set to dry until leathery material turns an amber color. Under the right conditions, the mace takes 3 hours to dry and the nutmeg takes 5 days.
We test for volatile oil content before grinding. We offer organic nutmeg that is free of harmful chemicals and pesticides.
