1/2c onion, diced
1/2c carrot, diced
2 cloves garlic, minced
1tsp ground ginger
1tsp coriander powder
4c vegetable broth
1 can chickpeas, drained and rinsed
1c escarole, roughly chopped
1. Sautée onions and carrots for about 7 minutes. Add in garlic and seasonings and cook for another minute.
2. Add in broth and cook for 10-15 minutes. Add in chickpeas and escarole and cook for another 5 minutes.
3. Voila! Enjoy your healing soup!
