I love showing easy, approachable ways to veganize favorite recipes, creating new flavor combinations, and finding ways to get creative to make leftovers fun!
1/2 block firm tofu, pressed
Veggies of your choosing (I used onion, bell pepper, tomato, spinach)
1tbsp plant butter
2tbsp flour
3/4c plant milk
1tbsp nutritional yeast
1/4tsp black salt
1. Sauté crumbled tofu and veg in a pan over medium heat until starting to brown and the veggies soften
2. While tofu and veg cook, melt butter over medium heat in a small sauce pot. Add flour and whisk together. Continue to cook, whisking constantly for another minute. Add plant milk and seasonings. Whisk together and let thicken for another minute or two. Taste and adjust seasonings
3. Turn tofu temp down and add creamy mix. Mix well, taste and adjust - I added a little more nutritional yeast and black salt here
4. I served mine in a everything seasoning tortilla with avocado, tomato, red onion, and scallion. Enjoy!
