1 cup quinoa
2 cups veggie broth
2 scoops spirulina powder
1 can jackfruit, drained and rinsed
2 cloves garlic, minced
1 tsp ginger, chopped finely
1 tsp olive oil
2 tbs fireball basil powder
dash of cayenne pepper
2 tbs fireball basil powder
dash of cayenne pepper
zucchini, ribboned
baby kale
corn
1/2 cup vegan Mayo
2 tbs apple cider vinegar
salt n pepper to taste
1/4 tsp garlic powder
1/4 tsp onion powder
1. In a pot bring your veggie broth to a boil. Add your quinoa and reduce heat. Cover and simmer until all the broth is absorbed. Remove from heat and let stand 5 mins. Remove lid. Fluff with a fork and stir in your spirulina. Set aside.
2. While the quinoa is cooking. Drain and rinse your jackfruit then pull apart the pieces. In a bowl add your jackfruit and basil flavoring (if you donât have the flavoring you can sub for any spice mix you love) stir till thoroughly combined.
3. Heat a sauce pan and add your olive oil,ginger and garlic. Once browned slightly add your jackfruit. Cook till the spices are aromatic then add your coconut sugar and cook until the jackfruit colors slightly. Remove from heat.
4. For the dressing. Add all ingredients to a bowl and whisk until combined.
5. To assemble. Simply add all ingredients into you bowl and serve with that creamy dressing which is the perfect combo with that spicy sweet jackfruit. This one bangssss my peeps! Please give it a go!!
