half a head of cauliflower chopped into bite sized pieces
3 tbs Organic Ground Turmeric
4 tbs almond flour
1 tsp garlic powder
mango, diced
2 cups red cabbage sliced thinly
cilantro, fresh
4 baby bok choy, chopped
2 tbs ginger
1 avocado
4 cups kale
fresh lime
1/2 cup coconut aminos
1 tsp ginger
2 tbs peanut oil
1. Combine all dressing ingredients and set aside
2. For the cauliflower, combine flour, turmeric, salt, pepper, onion powder and garlic powder in a bowl and add the cauliflower pieces, making sure they are completely coated. Add them to an air fryer with a healthy drizzle of olive oil and cook at 400 till crispy.
3. For the bok choy, simply sauté with ginger and a little olive oil until they soften slightly then remove from heat and set aside.
4. Fill your bowls with kale then add each component on top and drizzle with that lovely dressing liberally. Adding a squeeze of lime if you choose. THEN DIVE IN!!
