Vegan No Churn Vanilla Apricot Ice Cream

"Vanilla is the only edible fruit in the orchid family and there are over 150 varieties of vanilla. With so many types of vanilla, even more interesting, no two vanilla pods will produce the same flavor, similar to grapes for wine. Vanilla is mostly used in the dairy industry and vanilla is the most popular flavor of ice cream (big surprise!)" - Mika & Dan 


1. Blend it up! Add all ingredients except the jam to a high speed blender or food processor and blend until smooth and a fluffy whipped cream like mixture forms. Approximately 1-2 minutes.

2. Freeze. Pour mixture into a bread tin or freezer safe and airtight container. Add the apricot jam and swirl into the mixture. Freeze for at least 5 hours or overnight. You can also take this from the freezer 2 hours in and add additional jam swirled on top.  

3. Enjoy! You may have to let it sit out for a couple minutes to soften. This is definitely classified as hard ice cream, not a soft serve.
